Day 7 -- One Week...!

Yes, indeed ... a milestone has been achieved. 

Well, Divas, I'm jazzed.
 
Feels almost like I'm on the precipice of what I think is a life shift.
It's similar to other times in my life when I've embarked on something new and exciting.

Like when I quite my high paying high tech job one day (over 15 years ago) and went to massage therapy school. 
Now that was life changing.   I loved it!

And that's how I feel about this phase of my life.
All because I took that one little step and gave up coffee on a daily basis.

Now, I'm ready  for the next step... eliminating corn from my life.
That's right - I said corn.
Well, for the most part it has been gone... other than that popcorn I've been indulging in a few times a week.
and those little bites of corn bread I sneak from my daughter's plate. 

Yes, I've been cheating.  However, tonight when it was movie time I ate the most delicious Kale Crisps from the Daily Juice.
Absolutley delish and entirely Alkaline!!!

And guess what I googled Kale Crisp and found the recipe.  Here you go Divas!:

Kale Crisps

Recipe by Jessica Weiss, Oregon, Wisconsin

1 bunch kale, cleaned and dried in a cotton towel

about 2 tablespoons olive oil

salt

cayenne pepper (optional)

Heat oven to 425-450 degrees. Cut stems from the kale stalks (you can save the stems for another use, like a stir-fry or a quick nibble). Tear leaves into 2- to 3-inch-size pieces and place them in a large bowl. Drizzle in the olive oil, then toss the kale with your hands until all of it is lightly covered with the oil. Spread kale out on one or two large baking sheets. Don't pile them up; keep them in one layer. Sprinkle with salt to taste. Sprinkle lightly with cayenne pepper (if you want them spicy). Bake until kale is nice and crispy, 10-15 minutes. (If you bake these in a convection oven, they will cook much faster.) You will hear it hissing and popping while it is cooking. Don't worry; this is normal. Remove from oven, transfer kale crisps to a bowl, and enjoy. Makes four or more servings.

Okay - here's my commentary on this recipe:

You can maintain the nutrients by cooking them at a lower heat however... or use a dehydrator.

They are absolutely amazing. 

Try 'em.... you'll LOVE 'em.
